Quake Demo (9th May 1996)
Judging by description of this video on YouTube. The video was found on CD provided with issue of PC Zone#41 magazine called as 'MILES.mov'.
The video starts with description:
- "
- TECHNOLOGY SOLUTIONS
- Quake Demo
- ID Software
- May 9, 1996
- Length: 8:25
- "
The video showcasing the build of Quake prior to Beta3, as it has weapon models, sounds and HUD Qtest-alike. There are shown gameplay on several maps with a few changes:
- E1M1: The Slipgate Complex. Different textures (like from E2M1). Bridge extension like in Beta3, untextured boxes nearby the level's end.
- E1M2: Castle of the Damned. Pillars instead of boxes at level's begin.
- E1M3: The Necropolis.
- E1M4: The Grisly Grotto.

Quake on E3 1996
This short footage demonstrates Quake on E3 1996. The only map shown E1M5: Gloom Keep and the player (developer?) was writing command "map tim#" to change the map, confirming that by this time the levels were not named in final-style like [ExMx].

Misc
Other videos showing pre-release content, but videos were not made during development of Quake.
Tim14's video
Tim Willits released on his instagram[1] the video of unreleased map tim14.bsp.
"I usually ignore silly controversies, but this one I will respond to. Here is a video of a map call tim14.bsp from 1996 (running on a NextStep VM, thanks to the programmers here at id Software). This is a map “fragment” (I have a directory full of them), if you know Quake 1 DM maps, you will be able to recognize things in it, this is not just a sketch. I stand by what I said and I'm not wasting my time on this anymore. Now I am getting back to working on the newest Quake game."
